"Lime Biryani" Recipe

Ingredients
- 2 - 4 Limes (depending on size)
- 1 cup dry quinoa
- 1 1/4 Cup water
- 1 1/4 tsp curry powder
- 1/8 tsp ground ginger
- 1/8 tsp ground cinnamon
- 1/4 tsp salt
- 2 1/2 cups grated carrot
- 1 cup chick peas (unsalted/drained/washed)
- 1 1/2 cups spring onion
- 1/4 cup sliced almonds
- 1/4 dried currents or raisins
- pepper for taste
Directions
- Zest limes to produce 1 1/2 tsp zest, then juice.
- In sauce pan combine 3 tbl spoon lime juice, quinoa, water, 1 tbl spoon olive / avocado oil, curry powder, cinnamon, ginger and 1/2 tsp salt. Bring to boil, cover and simmer for 15-20 minutes or until quinoa turns transparent and liquid is absorbed. Once cooked, place in large bowl and cool.
- Prepare carrots, chick peas, spring onion, almonds and current/raisins and toss together.
- Combine remaining 3 tbl spoons lime juice, zest, olive/avocado oil, salt and pepper. Whisk until well blended.
- Combine all ingredients in together, then pour lime/oil mix over quinoa mixing and tossing thoroughly.
